How to Fillet Warsaw Grouper! The Warsaw grouper (Hyporthodus nigritus) is a massive deep-water beast—second only to the goliath grouper in size. These giants can reach up to 7.7 feet (235 cm) long and weigh over 400–440 pounds (max recorded around 436–198 kg). They grow slowly and live incredibly long, often 40–60+ years. On the plate, the meat is great: white, firm, and flaky with a mild, sweet flavor—excellent for grilling, frying, or chowders. WARSAW GROUPER!!! The level of anticipation and excitement leading up to landing these fish is always unforgettable. We were headed out to Pulley Ridge on a mission for a big Warsaw. While on our way we stopped early to catch a Bonita for bait. All we had was one… but that’s all we needed. Hooked him in the nose and dropped him down to the depths where the sea monsters lurked. 15 minutes later we noticed a small amount of movement on our @connley_fishing rod. We gave it 30 seconds with nothing else and decided to reel again to check the bait… it didn’t last long. The fish had been on there the whole time! Once we realized, it was all we could do to crank faster to get this GIANT away from any bottom structure he could possibly break our line on. After a good battle and a long retrieval we landed the beast. What a thrill! Our @freemanboatworks is simply built for making these 150+ mile runs offshore.
